The sturdy aluminum housing provides a secure, stable base, allowing you to guide the knife with both hands for maximum control.

Function & Use

EDGY is designed to keep your knives sharp by maintaining the ideal working edge for everyday use. Drawing the blade along the sharpening rod removes fine imperfections such as burrs, flat spots, and micro-chips from the cutting edge. This realigns and refines the edge, restoring the knife’s sharpness.

One of EDGY’s key advantages over conventional honing steels and sharpening rods is its solid housing. Because the sharpener stands securely on the work surface, both hands remain on the knife, giving you greater control over the sharpening angle and applied pressure.

For best results, place EDGY on a stable surface with the sharpening rod pointing away from your body. Starting at the heel of the blade (near the handle), draw the knife away from your body toward the tip. Use the sharpener dry—no water or oil is required.

Alternate between both sides of the blade. Depending on the condition of the knife, just a few strokes are enough to restore an excellent cutting edge.

Maintenance

The fine ceramic sharpening rod gradually collects metal particles from the knife blade during use. To maximize its lifespan, the rod can easily be rotated to expose a fresh surface. After extended use, when the entire rod has become coated with metal residue, it can be cleaned with dish soap and a sponge. A hard eraser (such as an artist’s eraser or ink eraser) also works very well for removing stubborn deposits.

The small rubber feet on the underside of your EDGY ensure a secure grip on the work surface and provide stability during sharpening. For optimum performance, keep the rubber feet free from grease, dust, and debris (such as flour), and clean them when necessary.

EDGY’s housing is made from high-quality aluminum and finished with a durable powder coating that resists contact with acidic foods. Avoid temperatures above 60°C (140°F). The housing should be washed and dried by hand.
